My great aunt always made these for Easter. It's a typical Easter treat from Molise. It appears related to the Sicilian Cassatelle. The pastry should be tender but a bit chewy, almost pasta-like. The final pastries are very yellow in color, from the egg wash. The filling has strong orange and mild anise flavor.

I think these are much, much better when fresh. After a day or so, they lose a lot.

The king of all ramen toppings! Chashu pork at its best, in my opinion, is rich, fatty, and practically melts when it hits your tounge. Some people prefer it a little more firm and steak-like in texture, but that's not my preference.

This is based on Ramen Lord's recipe for sous vide chashu pork from his [Book of Ramen](https://www.reddit.com/r/ramen/comments/hv9niv/my_brother_and_i_just_completed_a_free_ebook_on/). The biggest changes are that I added a bit less water to reduce the total liquid overall, because my vacuum sealer doesn't do well with lots of liquid. I also don't sear the pork ahead of time. It does result in slightly more flavor if you do, but it's so much easier this way, and it's not that different. I sometimes sear the sliced pieces with a propane torch before serving.

Not really chashu, but a good substitute for a chicken paitan ramen topping, or just to snack on out of the fridge.

This is based on [Way of Ramen's recipe](https://www.youtube.com/watch?v=xwVkNjRmNcw). This recipe uses a technique called an equilibrium brine. Because the brine will be ideal at equilibrium, you can't soak it for too long. The ratios are important--weigh your ingredients! If you want to make more or less, multiply or divide the ingredients exactly to the wieght of the chicken being used.

Still working on this. Was very good. Could have used a little more cayenne. The original recipe called for some Hungarian hot paprika, but I don't want to maintain another spice in my spice cabinet, so I used more sweet, and mixed with cayenne. Could also have used more garlic -- recipe below adjusted. I'd like to experiment with adding tomatoes; half of all the "traditional" recipes online call for tomatoes or tomato paste, and have call for no tomato product. Texture winds up similar to Chicken Tikka Masala -- I'd bet if I adjusted the spice blend, I could approximate a tikka masala sauce with the same techniques.

This is a really savory, rich, and satisfying beef stew for the Instant Pot or similar pressure cooker. The Guiness, chocolate, and flavored stock add a lot of complex flavor. This is based on [another recipe](https://www.pressurecookrecipes.com/instant-pot-irish-beef-stew/) recommended by a friend, but somewhat modified. I increased the amount of meat by 1lb, because my kids requested it; I trippled the amount of mushrooms, because mushrooms are awesome and full of glutimates, and I halved the amount of Worcestershire sauce, because the original recipe tasted too much of Worcestershire sauce - it has a strong, distinct flavor, and a full tablespoon wasn't needed, especially since we were adding fish sauce.

I'm looking for ways of streamlining the recipes. Picking out all of the mushrooms and half of the carrots in step 6, and removing the beef in step 7 is time consuming. The increased amount of meat makes it harder to brown; perhaps I should divide it in two and sear both pieces seperately.

Most dinner rolls have a lot of fat in them, usually butter. They have quite a bit in common with brioche. That's messy and a lot of work, especially if, like me, you don't own a stand mixer. This only has butter on the outside to keep the rolls seperate.

This was a recipe I came up with to use about 1.5 cups of prepared overnight (steel cut) oatmeal I had leftover. It was really tasty. I found a recipe online, and modified it to work with sourdough.

You may need to add more flour—possibly a lot more—to get the dough texture right. It's hard to calculate for how much water is in your oatmeal.

Still in development. Replaced the water from my dinner roll recipe with pineapple juice and milk. I also added butter and an egg, and increased the sugar. Because of the butter and increased sugar, it browns a little too easily, so I decreased the temperature to 350°F.

This is a family recipe from my great aunt, Vittoria. She's a fantastic cook, and I have many memories of her making this in her home in Dongan Hills, Staten Island. Struffoli is of Neopolitan origin, and are very tasty, especially when served fresh. It consists of deep fried little cookies, each about the size of grapes, piled on a platter, covered in a honey syrup, and topped with rainbow nonpareils to provide a nice crunch.

There are many variants of this on the internet, split between versions that use some sort of dairy (usually in the form of Irish cream) and those that don't. I personally prefer the ones that don't, but I want to develop both.

I use cold brew in mine rather than espresso. I want to experiment with either moka pot or Aeropress coffee at espresso strength.
