Move PROJECT env vars to WORKSPACE #3301

We read and set a couple of environment variables that contain PROJECT like PIXI_PROJECT_NAME.
Since we move from the name "project" to "workspace", we should start dealing with both PIXI_PROJECT_NAME and PIXI_WORKSPACE_NAME
