Having OpenCloud avaliable as a template in Unraid's Community Applications would be a welcome addition for the simplicity of deploying OpenCloud for personal use, such as Nextcloud.

Manual setup via Docker

In general this is no problem and i could take care of that, but from what i see, there are no finished built docker images provided by opencloud-eu. Their documentation hints at prebuilt containers on dockerhub, but there are none

Which webserver are you referring to? opencloudeu/opencloud-rolling image has everything you need to get started. For a complete deployment (including traefik as a reverse proxy and support for the Collabora online office) you might want to look into our docker compose example (https://github.com/opencloud-eu/opencloud/tree/main/deployments/examples/opencloud_full) for inspiration.
