Creates a stateless fedimint client, tries to follow the cashu model where you give the ecash for it to use at the time that it needs it and it returns unused ecash as change so the stateless client never holds any ecash on behalf of anyone. Potentially useful as a trnaslation service for apps that can't handle fedimint ecash itself and just wants to melt/mint out.
