Change to sound-to-letter correspondences in UI

Description

Change from letter-to-sound correspondences to sound-to-letter correspondences throughout the UI.

Why?

When a student learns how to read, the process she goes through is mapping sounds to letters. Letters don't "make sounds," but instead a sound is mapped to a sequence of letters. This reverse way of thinking is also easier to understand for content creators when they add new sound-to-letter correspondences.
