Not Quartz Composer Plug-Ins per se, but fun applications which you can combine with QC.
FaceOSC by Kyle Mcdonald. Tracks facial features and outputs as OSC messages on port 8338. FaceOSC is an example application included with Kyle's ofxFaceTracker addon for openFrameworks. Also check out the community's work with face substitution.
TouchOSC ($4.99) by Hexler. Create interfaces for iPad, iPhone, or Android which send (and receive) OSC messages over wi-fi with your computer. It can also send accelerometer data from your device.
Osculator ($19-$39) by Wildora. OSC swiss army knife. Route OSC data. Receive data from various devices (wiimote, wacom tablet, etc.) and send to OSC. Convert to and from OSC and MIDI.
Sound Flower by Cycling '74. Route audio around on your computer.
