DOCS: Inconsistent Table Spacing

Issue

Whether icechunk-python is a collapsible heading or not depends on what level of docs you are on. When at a higher level like overview it is collapsible

however, once you enter the python docs it fully expands and is no longer collapsible. Toggling back and forth between these was a bit disconcerting for me.

Solution

This is surely a mkdocs setting somewhere, but I couldn't tease it out after some poking around. Happy to look into this later.
