# Lamb Ratatouille | ||

Serves: 4 | ||
Time: 30 min prep + 30 min cook | ||
|
||
## Ingredients | ||
|
||
* 1 eggplant (~400g) | ||
* 3 zucchini | ||
* 2 Tbl oil | ||
* 1 onion | ||
* 300g lamb leg chops | ||
* 2 tomatoes | ||
* 2 Tbl tomato paste | ||
* 1 Tbl sugar | ||
* 1/4 cup water | ||
* 1 green apple | ||
* pasta | ||

## Method | ||
|
||
1. Dice onion, tomatoes, lamb, apple. Dice eggplant and zucchini and cover in salt for 20 mins, then rinse and dry. Put pasta on to cook. | ||
2. Heat oil, cook onion and lamb for ~5 min or till onion soft. | ||
3. Add eggplant, zicchini, tomatoes, paste, sugar, water. Cook for about 10 mins or till lamb tender and veggies are soft. | ||
4. Add in apples and pasta, stir till heated through. | ||
