# Baked Rice Pudding | ||

Serves: 4 small | ||
Time: 20 mins prep + 50 mins cook | ||
|
||
## Ingredients | ||
|
||
* 1 cup rice | ||
* 1/2 cup dates/saltanas | ||
* 2 eggs | ||
* 1/4 cup sour cream | ||
* 1 cup milk | ||
* 1 tsp vanilla essence | ||
* 1/4 tsp mixed spice | ||
* 2 Tbl brown sugar | ||

## Method | ||
|
||
1. Cook rice. Chop dates. | ||
2. Preheat oven to 200. Combine eggs, sour cream, milk, vanilla, spice and sugar in a bowl, mix well. | ||
3. Add a small baking dish inside a larger baking dish and fill the outer up half way with boilding water. Add all ingredients into the inner baking dish. | ||
5. Bake for 50 mins or till set. | ||

This makes 4 small serves, so serve with icecream or custard or strawberries. | ||
