Serves: 8
Time: 10 min prep + 30 min cook
- 8 lamb chops
- 1/4 cup red curry paste
- 400ml can coconut milk
- 1 Tbl lime juice
- 3 tsp brown sugar
- 1 Tbl fish sauce
- Frozen veg
- Defrost frozen veg.
- Brown chops, drain on paper.
- Add paste to pan, cook till aromatic.
- Add frozen veg, coconut milk, lime juice, sugar, and sauce. Simmer ~5min or till slightly thickened.
- Add chops, simmer. Add rice desired.
Serve with rice or mash.
