Lamb Chop Red Curry

Serves: 8

Time: 10 min prep + 30 min cook

Ingredients

  • 8 lamb chops
  • 1/4 cup red curry paste
  • 400ml can coconut milk
  • 1 Tbl lime juice
  • 3 tsp brown sugar
  • 1 Tbl fish sauce
  • Frozen veg

Method

  1. Defrost frozen veg.
  2. Brown chops, drain on paper.
  3. Add paste to pan, cook till aromatic.
  4. Add frozen veg, coconut milk, lime juice, sugar, and sauce. Simmer ~5min or till slightly thickened.
  5. Add chops, simmer. Add rice desired.

Notes

Serve with rice or mash.
