Time: 15min prep + 45min cook
- 500g pumpkin, diced (Half a Butternut)
- 2 potatoes, diced
- 4 cups chicken stock
- 3/4 cup red lentils
- dolop of light sour cream
- salt and pepper to taste
- Put chicken stock, lentils, pumpkin and potato in sauce pan.
- Simmer for 45min
- Add a dolop of light sour cream
- Stick blend
