Time to make: 20min prep + 30min cook
- 1kg chicken thigh
- 2x brown onion
- 2Tbs butter chicken curry paste
- 4tea ginger
- 2tea cumin
- 2tea garam masala
- 500g frozen veg
- 500g tomato puree
- 2x400g can chickpeas
- 140g natural yoghurt
- Dice chicken. Defrost veg. Dice onion
- Brown chicken and put on in a bowl
- Brown onion
- Add vegtables, curry paste, ginger, cumin, garam masala. Cook till aromatic
- Add tomtato puree, chickpeas and chicken. Add about 250ml of water. Bring to boil. Simmer for 30minutes
- Serve with dollop of yoghurt nd rice, cocous or mashed potato
