Time: 10 min prep + 30 min cook
- 1 brown onion
- 1 tsp crushed garlic
- 4 bacon rashers (short cut is best)
- 440g can potatoes
- 500g frozen broccoli
- 310 g creamed corn
- 1 litre (4 cup) water
- 4 tsp chicken stock
- 1/2 cup or 300g tub of sour cream
- Drain potatoes, dice brown onion.
- In large saucepan, add some oil add garlic, onion, bacon and cook till onion is soft.
- Add potatoes, frozen broccolli, corrn, foor for ~3 min.
- Add water, stock. Bring to boil. Simmer for 20 min.
- Blend to your liking.
- Add sour cream and serve.
