Serves: 4 small Time: 20 mins prep + 50 mins cook
- 1 cup rice
- 1/2 cup dates/saltanas
- 2 eggs
- 1/4 cup sour cream
- 1 cup milk
- 1 tsp vanilla essence
- 1/4 tsp mixed spice
- 2 Tbl brown sugar
- Cook rice. Chop dates.
- Preheat oven to 200. Combine eggs, sour cream, milk, vanilla, spice and sugar in a bowl, mix well.
- Add a small baking dish inside a larger baking dish and fill the outer up half way with boilding water. Add all ingredients into the inner baking dish.
- Bake for 50 mins or till set.
This makes 4 small serves, so serve with icecream or custard or strawberries.
