Expose more stuff to allow for people to do custom stuff

When I did the 'Foundation' POC I exposed a load of things that I though might be useful including:

• HOF
• Express
• The logger
• The express 'app' object

Any chance we could do some of that here? Should mean that the user is less constrained.

No saying no, but we have had these discussions, about what the user needs and wants to be able to customise. It showed that in no case that we had witnessed did any user of HOF want to veer from the set up as defined in the hof example form.

I believe there may be a case for exposing the app, I also think that many people are quite satisfied with bootstrap taking the decision out of their hands. So I'd prefer we expose internals on a case by case basis.
