If I uninstall it the server crashes even if I reset the nether

For future reference, please give an exact version number instead of "latest". The reason ask for this, is some people think they downloaded latest, but either the website they got it from was outdated, or their mod launcher didn't download the right version for some reason.

But I digress, it does not matter at all for this issue. It is not possible to easily uninstall worldgen datapacks, and therefore extra steps must be taken. Follow the guide at https://sawdust.catter1.com/tools/level-editor
