docs: update incorrect values in docs

Overview/Summary

This pull request includes updates to the docs/wiki/ALZ-Policies.md file, focusing on the policy definitions and policy definition sets. The changes involve updating counts and descriptions to reflect the current state of policies.

Updates to policy definitions and sets:

• Updated the count of Policy Definition Sets from 13 to 12 and Policy Definitions from 3 to 4 in the Intermediate Root Management Group section.
• Updated the descriptions and names of several policy definitions, including changes to custom and built-in policy sets.
• Updated the count of Policy Definitions from 15 to 20 in the Landing Zones Management Group section.
